Vacuum packaging is a packaging process that extracts air from the packaging before sealing.

Food Packaging and Processing

With the changes in social consumption habits and the increasing emphasis on food safety, the application of vacuum technology in packaging and food processing is becoming more and more widespread. Food processing covers a wide range of applications, and vacuum is often used in packaging for different characteristics. Usually, vacuum plays a crucial role in packaging technology and production. The use of vacuum technology can efficiently and accurately achieve packaging molding, thermoforming, and coating. In addition, vacuum technology can be used for movement, transportation, unpacking, and sealing. During the packaging process, vacuum can also be used to feed and embed the items to be packaged. The use of vacuum technology in food packaging technology helps to maintain the freshness of food for a long time without compromising its quality. Using MAP (Modified Atmosphere Packaging Technology) for fresh food can maintain the appearance, freshness, and taste of the food.

Food packaging

By reducing the residual oxygen concentration, the growth of aerobic bacteria is restricted, which can generally extend the storage period by 5-10 times. In addition, vacuum packaging can prevent the evaporation of ingredients to maintain the original flavor and texture, and can also reduce surface dehydration and hardening caused by dry and cold air flow, preventing secondary pollution during transportation.

Chamber packaging machine: The chamber packaging machine can be a single chamber or double chamber type, with or without a belt conveyor.

This type of model operates in a rhythmic cycle, pumping approximately 1 millibar from atmospheric pressure every 0.5-2 minutes.

Modified atmosphere packing

MAP modified atmosphere packaging includes two steps: evacuation and inflation. According to different needs, there will be one or more extractions and inflation cycles to create a protective atmosphere inside the bag

There are usually the following types:

-High concentration of oxygen (O2) keeps red meat products vibrant, both in terms of quality and freshness.

-Nitrogen (N2) is mainly used to fill packaging volumes and is not easily reactive, such as for packaging protection during the transportation of fragile foods.

-Carbon dioxide (CO2) reacts with water to form carbonic acid, which has an acidic pH and can inhibit the growth of microorganisms in this environment.

Typical vacuum system: single-stage rotary vane pump or dry screw pump, combined with Roots pump. In the case of oxygen reinjection, special vacuum pumps (excluding hydrocarbons, using inert oil, explosion-proof vacuum pumps) may be required, which are typically used for red meat packaging to enhance redness, as well as oxygen compatible sealing materials.

MAP bulk packaging: These machines are commonly referred to as "Snorkle machines" or "vacuum probe machines", allowing for simultaneous air conditioning packaging of multiple small or large bulk bags of food. After extracting air, the mixture of O2 and CO2 gases is introduced into the bag (controlled atmosphere) and then automatically heat sealed.

The typical pumping speed of a vacuum pump is single-stage 10 to 65m3 · h-1

Hot forming/stretch film packaging machine

All types of products can be continuously packaged through plastic film or pre formed trays on two scrolls. The lower film is formed into a tray container by heating, and the upper film covers the tray and is heat sealed to isolate the environment.

The film is positioned above the thermoformed container and then heat sealed to isolate the product from the ambient air. The product is packaged in body to body or modified atmosphere packaging. Vacuum is required in both cases.

Send the film above the forming mold and use heating and vacuum to make a food container (thermoforming). After rapid cooling of the container, put the food into the container and send it to the sealing mold. Vacuum and heat it to achieve sealing between the film and the container.
